In the past, I have had great product from Ivan's such as specialty cut steaks, bison, etc. Based on that, I thought nothing of ordering a large chuck roll roast from them. When I arrived to pick up the roast today, I was surprised and disappointed to see that the roast I had ordered (12-14 lb) was not tied as a chuck roll should be, but was rather piled onto the styrofoam boat and wrapped continuously with plastic wrap to hold its shape. I did ask the butcher on site to either tie the roast or give me some twine to do it myself, he took it out and tied it. When he brought it back to the register, it had a total of 4 ties which barely held the shape of the roast. It looked very sloppy to say the least. If I wasn't in a hurry to get back to the office I would have asked them to re-tie the whole thing again. I will keep coming back for my usual steaks and such, but definitely not for a large cut like a roast or side.
