Our roastery space is also the headquarters for Coava. The 13,000 square foot facility was gutted and built from the ground up, constructed over the course of late 2015 to early 2017. This location is built upon our pure passion and love for our craft. Housing all of our green coffee, roasting equipment and production space, it also boasts a dedicated lab for wholesale training and further program development, offices, a cupping room, and a private meeting room. The front entrance opens into a modest retail space, which is open from 8:00am - 2:00pm, and public cuppings are held here daily at 1:00pm. This serves to further the mission that spearheaded our flagship location; conversation and focus on the details and ephemera that excite us about coffee. In addition to pour-over of limited HQ exclusives (separated in-house) and single origin micro-lots, the retail space also houses a six tap keg system that facilitates a rotating selection of cold brew coffee options, tea, sparkling water, and beer collaborations that will be available to the public during operating hours. It is our hope that we can continue and intensify the things that we love about coffee, and that includes sharing them with the public, whether it be through knowledge, experience, or product.
