Don's had his shop in the same building since 1971. He's a 1-man shop but he works almost 12 hours every day the law will allow, is almost always in a great mood, and (most important of all) delivers an amazing price. Sometimes the wait can be an hour or better (he doesn't take reservations), but the fact that folks willingly and politely wait is, in itself, a testament to the quality he provides. Great guy... great atmosphere... great cut... great prices. I challenge anyone to do better.
